It is problematic to have touch to wake "on", while AOD is on. Adding the option to be able to turn this off while having Always on display on would be great. This is not an upgrade, this is downgrade. The watch starts to open some stuff when touching around which is frustrating.

I don't understand what you are getting at.  Some people like the always on display so they can check the time without waking the watch.  In that instance, "raise wrist to wake" would be the problematic feature with the AOD.  Tapping the screen to wake will turn the AOD off and wake the watch to be able to use the apps, check notifications, make a call, etc.  This is what one wants. When the screen times out, the AOD will reactivate. You can shorten the time out to 15 seconds.  If you find tap to wake problematic, you can always just turn it off and use the press home button method of waking your watch - it really doesn't take any more effort than tapping.

The problem is that when the AOD is "on" you can't turn off the touch-to-wake feature. Because of that feature, it opens random apps during the day.

I see that the tap to wake goes on automatically when AOD is on.  That makes sense, since one would use the tap to wake if they wanted to use the watch's features.  If your watch is activating by accidental taps from your sleeve or bumping up against things, I suggest you turn off the touch sensitivity setting in the control panel.  Your screen may be too sensitive to touches.  You can also put a screen protector on which may further reduce the sensitivity.

If you haven't already, try wiping the watch's cache partition, because there is no way a sleeve should be waking the watch.
