Galaxy S25
So
Yes accidental touch protection is turned on, and touch sensitivity is off, and the phone does whatever it wants in my pocket, edge panels is off, and the stupid now bar is disabled as that amplifies the issue severely beyond how bad it is now.
I do not ever remember me S23+ having these highly sensitive touch related issues. There does not appear to be anyway to address this issue. Maybe Samsung will take note and address this or allow users to adjust the touch screen sensitivity with a slider not a dumb switch although something tells me this will be swept under the rug

Do you turn off your screen before you put it in your pocket?

Galaxy S25
I'm having the same issue with my S25 Ultra, although this has been a consistent issue for the last 7 generations of galaxy devices, there isn't much to be done about it, samsung's implementation of touch protection has gotten slightly better with detecting it isn't in a dark environment and knowing when the device is actively being used by the user in a dark environment but it's still not what it should be and probably never will be, it's a limitation of the sensors and the fact the screen is easily tricked.
