When taking photos or selfies (stock camera and Expert Raw), the phone processes imagecpossibly using AI, resulting in unnatural-looking pictures. The output has less light, exaggerated colors, and artificial details, like my eyebrow appearing merged or overly smoothed. But with a third party camera the pictures look more realistic, like no filter at all

Third party camera apps likely aren't taking full advantage of Samsung SDK for the camera. Have you tried using Pro mode?

But @jgm509 stated that using a 3rd party app provided what looked like realistic images. Ngl, I don't think Samsung can create any better SDK to make better photo taking as it is peaked out, else this would have happened by now. The last camera update (in February) only addressed nighttime photo/video taking. The hardware has barely changed over the past 5 years so I do not know how much more can be squeezed out of it. Software can only do so much if the hardware is not changing on a noticeable metric, and that is highlighted by the processing power of the current best smartphone CPU going in the SD 8 Elite, which should aid in producing better and more realistic images.

I notice that because third-party camera only supports wide and ultra wide. I try pro mode on both camera, play with ev, speed, iso, intelligent optimization but still oversmooth the picture. I find my mom A35 have better camera than my S25U

That's very strange. To the best of my knowledge, there is zero optimization performed when taking pictures in Pro mode. You shouldn't be seeing any post-processing smoothing even if you still have Intelligent optimization set to Maximum.

Thanks for clarifying. Check to see if you have face effects enabled. I've provided screenshots for guidance.

Even recently? Have you tried it using selfies? It distorts and makes people look unappealing and fake and not like themselves. It's ridiculous ruined my first date in years. Makes it look like I have drawn on eyebrows and weird eyes and ugly skin

Everything is set to zero in face effects. I will wait to see if anyone else comments about this issue to know if it a problem with my phone

Turn off the functions that use AI and then check the results. When using the camera, go to settings in it, then intelligent optimization. Toggle off scene optimizer (if it is on) and then set the intelligent optimization to minimum. Then take a few shots and judge from that point, even going back forth in those settings changes to look at those differences.
