Why cant I like or love and image by holding the message and an emoji appears

You will need to use Google Messages to have full RCS features, like reactions.

As @Mujibar suggested, the features you are requesting are available to you via Google Messages.

If you haven't switched already, you should ASAP as Google messages is the new default messaging app and is required for advanced messaging features according to official guidance from Samsung.
