Galaxy S25When you press, hold, and move an icon onto another icon, a folder is formed. Subsequent apps can be added to the formed folder by either dragging the app into the folder or tapping the "+" on the upper right to add your app (the + is only available after the folder is formed), and you can name the folder. You can then place the folders in the order you want. You should see two pre-formed folders at the very beginning of the apps array--Google & Samsung. You can also create folders on your home screen so you can minimize the number of home screen pages you have.
I'm with you, though, on allowing the alpha sort on the horizontal scroll. At the very least, if you alphabetize on the vertical scroll, it should keep the order if you switch to the horizontal scroll.
