Why isn't there the ability to add a few more widgets and toggle key functionality on lock screen? Like more than what is currently limited? Can we get another widget bar and add more buttons. Just wondering.

What is it you are trying to accomplish?  Other than have full functionality of your phone without ever unlocking it?

Quick launch into specific app, or custom app. Go straight to web or chatgpt. I know you can have the pin in the bottom right but how about a couple more and or 1 extra resizeable widget

You can do that by adding the app to one of the lower corners of the lock screen.  The widgets you can add now to the widget box under the clock are only to launch specific Samsung apps.  You can tap on the LockStar settings (first install LockStar) to add up to six favorite apps.  I assume turning this on and adding your apps will launch you into these apps.  You can also use LockStar to add widgets for any app that there are currently widgets for.
