Ever since I got the one UI 8 update my phone has been buggy. Battery doesn't last. App glitches. Slow response from apps. Touch screen doesn't respond to touch like it used to. This is unacceptable Samsung.
Gallery app takes forever to load pictures for viewing.

You can potentially alleviate performance issues by completing these steps for routine maintenence:
☆ Follow Samsung’s Best Practices Guide
In particular, clearing device cache is an important practice in order to clean up junk files and keep things running smooth.

☆ Use Samsung’s Good Guardians
Download Good Guardians and run its various modules. These modules optimize performance and can identify unusual behavior.

App Booster re-optimizes your apps. This should be run after an update.
Memory Guardian helps clear up device memory and boost performance.
If the issue persists, it may be an issue with the specific app rather than with your device. Make sure the app is up to date. Go to Settings > Apps > Desired app > storage > clear cache. If that doesn't help, clear data. If that doesn't help, uninstall/reinstall.
If none of these steps correct your problem, send an error report to the apps developer (developer contact info available in Play Store Listing) to make them aware of the issue.

As for the battery, Galaxy phones have an adaptive battery feature that uses machine learning to optimize battery consumption based on your usage.
After a major software update, this feature resets and needs to relearn your usage patterns. You may notice diminished battery life for a 7-14 days while this process takes place.

It's been buggy for me too. I can't upload photos, gallery won't load. It refuses to play videos regardless of the app. Restarting it helps with the video problem for a short time, before breaking again.
I've even wipe the cache partition and it's still bugged.
