I think Google considers YouTube to be a core app, like Calendar, Gmail, Search and Contacts. Android can't remove it, but you can hide it in your app drawer. You can disable it.

This will be my last cell phone I'd rather just have a landline and an answering machine lot safer for me my children probably everybody around me actually I wish I had known that before I purchased this

It's a requirement from Google to have the Play Store and services installed on phones. Google has a list of apps that much be installed and no way to uninstall them without root permissions.
I loathe the GMail app and the best I can do is disable it.
