I want to stop updates to my phone.

I not interested in a lot of the new features (AI), moves items and breaking applications. I paid a lot of money for the phones and configured it and happy the way I want.

Heres a question. Samsung pushes a update and bricks the phone, will they replace the phone? The answer is no and so leave it alone.

You can install netguard and block network connection the the software update package. This will obfuscate update requirements but you have to be vigilant if netgaurd turns off.

Did Samsung include new terms for the additional features or changes?

The original terms you agreed to apply.  However, after each update is installed, you may get a popup to agree to the updated terms before you can continue using your phone - no popup = no new terms.  Once you tap OK, you agreed to any new terms or reaffirmed your agreement to the original terms.  Your original license agreement is that Samsung and Google can make any changes to the software they deem necessary - that includes updates.  New features that require a separate agreement to use them will require you to do so when you first attempt to use them or open its app.

Trade in your phone and buy an older model that is no longer eligible for updates.

Hmm. The only phone I ever had that downloaded an update that bricked it was my first smart phone. An apple. Which is why I switched to Samsung. Haven't had any problem since then.

People also mis-use the term "bricking".  Bricking means the phone is unusable in any capacity except as a door stop - no turning on, no charging, no hope of recovery or correction - nothing.  If there are glitches or errors, that's not bricking, that's an inconvenience.
