All this last update did was install a handful of apps on my phone without my permission, which is not only unhelpful but downright malicious. The previous update changed ever single thing on my phone they could find. I want the previous UI back and for these greedy corporations to stop changing things on MY device without MY consent.

Your consent was given when you first set up your phone. You own the device; Samsung & Google own the software. Which apps were installed with the update?

A solitaire app, one of those stupid match three games, and a couple others, at no point did I ever ******* agree to have invasive apps that probably contain maleware installed on my phone without approval or notification.

Is your phone carrier locked? If so, those apps likely came from them. When you first activate a phone you, there are many things you approve of, including the ability for Google/Samsung to make updates and changes to their firmware/software. Carrier locked devices also have their own (often preinstalled) bloatware apps and "App clouds" that auto install various apps & games. These can also be added during updates as they see fit.

If you got your device from your carrier with some kind of deal/device payment plan, it is them putting these apps on your device. They offset the costs of your deal by getting paid by app developers to put them on your phone. Almost all of them can be uninstalled.

I buy my phones from Samsung so as to to have carrier bloatware on my device.

You should really read your Samsung EULA (End User License Agreement), specifically:

"IMPORTANT. READ CAREFULLY:"

...

(1b) "By using this device or any other Samsung Product, including wearable devices, accessories, and mobile phones and tablets running on the Android or other Samsung operating system ("Product"), you accept the terms of this EULA. If you do not accept these terms, do not use the Product or the Samsung Software."

"4. SAMSUNG SOFTWARE UPDATES.

Samsung may make available to you updates, upgrades, supplements and add-on components (if any) of the Samsung Software, including bug fixes, service upgrades (parts or whole), and updates, the removal of, or enhancements and feature improvements to any Samsung Software (including entirely new versions), (collectively "Updates") after the date you obtain your initial copy of the Samsung Software. This EULA applies to all and any component of the Updates, unless we provide other terms along with such Updates. To use Samsung Software provided through the Updates, you must first be licensed for the Samsung Software identified by Samsung as eligible for the Updates.

While the Updates will be generally available, in some limited circumstances, the Updates will only be offered by your network carrier, and such Updates will be governed by your contractual relationship with your network carrier. This EULA will not affect your legal relationship with your network carrier. Your SIM card stores information about your service plan with your provider, and this information is tied to the device on which the SIM is activated. If you move your SIM to another device, you will not receive Updates unless you update your service plan with the new device.

Your Product may download certain Updates automatically from time to time through Wi-Fi or other network connection. You may change the settings in your Product to manually download the Updates, however, given the importance of receiving Updates in a timely manner, to resolve critical security or safety problems reported to Samsung, to defend against new threats and vulnerabilities, and to ensure the proper functioning of your Samsung Mobile Device and the Samsung Software, these Updates may be automatically downloaded and installed which may limit the usage of some software and/or hardware. Where an Update will materially alter the Samsung Software, Samsung will provide you with notice of the Update, where practicable. Updates may result in data consumption, and we recommend you switch to a free Wi-Fi or free network connection to avoid any unintended data charges. We recommend you check availability of any new Updates periodically for optimal use of your Product."
