I can't give you a specific answer because I use Photos rather than Gallery but the type of behavior is rather endemic around phone photography, though taking days is far beyond what I'd expect. I suggest browsing through the Settings in Gallery, the camera app you use and the System Settings and set all AI features off or to a minimum level. Be the artist yourself and you can always recover imperfect pictures later, manually uding tools like Lightroom.
After a quick look you might try turning off the detail enhancer, but there are several AI adjustment features in Gallery, the default camera app and the System Settings. I'd turn them all off and only use them if needed. My own experience using them has me feeling they are gimmicky rather than useful.
On my S25U my photos are available to use, including transfer elsewhere at most within seconds of shooting. The longest times are only related to image size in my case.
