So 2 months after getting One UI 7, my app storage started to blow up. WhatsApp is already taking 20 GB, and the rest of the apps are taking 30 GB, with about 30 small apps and the rest ( which is about 90 apps ) are samsung features. Please help, the phone is already at 103 GB. And to notify all: total app space is 52 GB and total apps 122.

You need to go into WhatsApp and clean out what's not needed.
How often do you clear the cache of apps. If you haven't done it in a long time, it would be a good idea to do it now, especially apps like Facebook, Instagra, email etc.
I just went through my phone and freed up 8 gb and cached data.
You don't have that many app, go through them all clear the cache in the storage section of each app.
It might be time also to clear out your gallery and put your photos onto your computer.
