Hello. I am trying to figure out how to make my background clock on the home screen a different color, specifically white. 

Note: it is NOT my lock screen, it is my home screen after I unlock my phone.

I have changed my wallpaper to various pictures or solid colors but the clock is always blue.

I have adjusted my themes to pink, green, black and white, turned the theme off to use the default and the clock is always blue.

The only display setting I can change on the clock is digital or analog. I get the option to change the color for the clock on the lock screen but I do not get the option for the clock on the home screen.

Anyone have a way to fix it?

You cannot change the coloring of the home screen clock widget.  You can either remove the background or make it transparent.  Those are your only choices. Only the lock screen/AOD allows customization of the clock. I did a cursory search in the Play store and there is an app called "Digital Clock Widget" that appears to allow colorization of its clock.  There may be others.  You will have to search on your own.  You are not required to use the Samsung clock.
