I agree, if you don't trust that app (or their privacy policy) & it's just being an annoyance, you could remove your info from that app & uninstall.
And definitely make sure you confirm & verify.
Personally, I prefer using the Gmail app over the other app for my Gmail email for functionality purposes.
Just as if you decided to use Google's messaging, calling, note, clock, etc platforms over Samsung's, you can clear app data (and cache) along with permissions &access, uninstall the app (or updates, if you can only disable it), & you're all set 🙂
Optional (just in case there were any questions about that- if not, you can definitely skip)

If you get the option to "Remember this device", you can also choose either which option.
If you use an Autofill service (at least for credentials), and you don't really trust Samsung Pass on that level, you could choose Google (or another of your choosing) to be your default instead of Samsung.
It should help in limiting the amount of times you're repeatedly asked for your credentials.
