How do I go back to one UI 6.1? I don't want to run beta on my phone till April

To revert back to 6.1 you have to use smart switch 

1. Open the Samsung Members app and withdraw from the beta program.

2. Install Samsung Smart Switch on your PC and connect your phone with a data USB cable.

3. Fully backup your phone using Smart Switch onto your PC.

4. Go into settings and look for Auto Blocking. When you find it, it will appear to be turned off. But click to reveal two additional switches that are grayed out, but enabled. One of these blocks software from loading via USB and will miss you up if you try to roll back the software without disabling it first. To do so, turn the main Auto blocking switch ON. Now the sub-switches will be accessible. Turn them OFF. Now, turn the main auto blocking switch back OFF.

5. Go back into Smart Switch on your PC and press "downgrade" leaving your phone connected to the PC via the USB data cable. It will take awhile, but now the phone will accept the 6.0 rollback and reset your phone. Once this process has completed, go back into Smart Switch and RESTORE your phone from the files you previously backed up to the PC.

If someone must critically rely on their phone's performance and reliability for whatever reason, then it's their responsibility to at least browse the fine print before joining a beta where they will be using what is experimental software with any problems and issues that will inevitably occur.

Theres a cloud backup option.

You still have to have a PC to revert back to 6.1 since smart switch has to re download the 6.1 software and then transfer it to back to your phone

It's definitely good that the cloud option is there. But fyi I used it once just to play around with it. It takes a very long time to upload. I have a very fast gigabit connection and it took over 2 hours to complete a backup of about 150 GiB. Direct backup to PC is definitely the way to go. For the OP I could be wrong but I really don't believe we'll be waiting until April. Samsung announced yesterday that the roadmap floating around is inaccurate. The build we have now feels very close to a finished product.

Going back to 6.1 this late in the beta doesn't seem to make a lot of sense to me, since you'll end up on 7 again soon enough. I haven't missed any features during the beta (even mobile payments work), so it seems like a lot of work for little return.
